Do any of you have a good recipe for canned fish? I had a friend who used to smoke the fish and then can them but never did get his recipe. I don't have a pressure cooker and was wondering how to prepare them and can them using hot water bath. Can you help me with this?
My buddies mom used to can steelhead for us. I'm pretty sure she used a pressure canner. I'll get ahold of her and find out her process. The steelhead allways turned out excellent. We would open a jar, dump it on a plate, and eat it with crackers and cold beer!
She also did a batch of carp for us one year, but to be honest, it was pretty bland.

I'm just getting into canning myself. From what I've read fish fall into the low acid group and should only be pressure canned. Low acid foods need to reach and maintain a temperature of 240 degrees. Hot water canning only reaches 212 degrees.
We canned salmon when we used to fish for them. We did them in pint jars. We cut it into chunks, and packed the jars to about 3/4" from the top. We added a good squirt of ketchup and put on the lid and ring. Processing time was 1 hour @ 15psi. We just had some tonight. Have'nt done any since 2001, and it was still fine.
