Recipe for canning beaver, muskrat, and coon

Just wondering if ya all had any recipes for canning the animals listed above.

Going to make the most of my trap line meat this year and want to but it in a recipe that all the family wouldn't mind eating.

not sure about the muskrat & coon but beaver ain't bad ...I'd just follow directions for canning beef - please pressure can (meat)! I thoroughly cook like stew meat, pack in jars with broth & pressure can qt size for 90 minutes at 10lbs pressure ( if you are at over 1,000 ft altitude, it's 15lbs pressure) ...pints for 75 minutes - HTH!

I ate muskrat one time in Utah. Looked good, marinated it in apple cider. Tasted a whole lot like pond mud smells.

if you do coon make sure and get all the fat off of it one time i killed two young coon ate one put the other in the freezer and i didn't take the fat off about 3 weeks later i took it out cooked it up the same way i could not eat it it was so strong
