Really in a pickle! AKA the Pickle Party

Ok, it's not really a party, but I figured I would share my evening of pickle making with all of the swamp.......

My friend and I spent a good 6 hours making up a bunch of sweet/sour/spicy pickles...I sure hope they're good!

First, you need the ingredients:




......then ya gotta get 'em all jarred up.......


.....then they go through processing.....(ok, is she canning or coal-mining ....what's with the headlamp??? )

Yay! We're done! (Can you tell we're happy? ;D ;D ;D) Yeah, it was about midnight by the time we finished

(yeah, I guess we're REALLY happy )


Once they pass inspection I'll share the recipe!!!!!

That's how you earn karma and a few jars of pickles! It never hurts to suck up to the boss' daughter LOL!!!

They are a sweet/spicy pickle and there is cauliflower and carrots with the cukes along with all the peppers and onions and such. They should be DELICIOUS but I'm keeping my fingers crossed.

Hi everybody! The pickles passed inspection (they're YUMMY!!!! ) so here's the recipe as promised.

4 lbs pickling cukes, sliced
1 large onion, sliced
1/2 red pepper, sliced
1/2 green pepper, sliced
3 medium jalapenos cut into rings-I kept the seeds intact
1/2 head of cauliflower broken into tiny florets
2 medium carrots, sliced-I crinkle cut mine-nice little detail ;D

Put all of these veggies in ice water and soak for 3 hours. Drain.

Brine:
1 large clove garlic, minced
1/2c canning or kosher salt
5c sugar
1 tsp. turmeric
1/2 tsp. whole cloves
2 tsp. celery seeds
1 Tbsp. Yellow mustard seeds
1 Tbsp. Black mustard seeds
2c White vinegar
2c Cider vinegar

Combine brine ingredients in a pot and bring to a boil.

Evenly distribute vegetable matter into sterilized jars. PACK VERY TIGHTLY-the cauliflower takes up a lot of space so if you do not pack the jars you will not have enough brine and the jars will only be half full after processing.

Cover vegetables with brine. Seal and process jars. I processed for 10 minutes.

I am not sure how many jars this makes, probably a dozen pints. I quadrupled the recipe when I made it and used all different sized jars so that's just my guess.

They're pretty tasty after only 2 weeks.

Note: If you do not like spicy things do not put in the jalapenos. These pickles are zippy. They won't make you cry (try habaneros for that!) but the only people who tried these and did not like them did not like the fact they were spicy. I think they're great.

They got the Boss's approval- 'nuff said ;D
