here is a good recipe fro the cabin,yields 14 pints or 7 Quarts
4-5 lbs beef stew meat , 5 stalks celery , 1/2 teaspoon pepper
1 table spoon oil , 4 small onions
12 medium potatoes , 1.5 teaspoon salt
16 small carrots, 1 teaspoon thyme
cut meat into 1.5 in.cubes,brown in oil.combine meat,vegetables and seasonings in a large sauce pan.cover with boiling water.Bring stew to a boil.Ladle hot stew into hot jars,leaving 1 in head space.remove air bubbles.Adj.2 piece Lids.Process Pints 1 hour and 15 Min's.Quarts 1 hour and 30 Min's.,at 10 pounds pressure in pressure canner.
This is always a welcome sight at our Deer camp.I have one for Chili,too I will post tomorrow.
