I haven't put up any spaghetti sauce for a few years because I haven't grown the maters.
I came on a real good deal on a buschel of Roma's the other day.
Long story short I never had a food processor and dreaded skinning all those little buggers.
Three years ago I bought a 1 hp grinder, so I fired it up with the 1/8 inch plate, and after a quick cut in half long ways and nipping the core I put them through the grinder and them came out great.
I ran approx. 300 halves through in about 15 minutes. Huge time saver. No need to skin or if not skinning, much quicker than filling up a processor 10-12 times.
That is basically how I process mine. I started with a hand crank deal, but now have an attachment for the kitchenaid mixer. All the sauce and juice comes out the bottom, and the skin and seeds come out the end. Works like a charm.
I just run mine thru a food mill. Takes a little elbow grease, but it takes the skin off and removes most of the seeds. Picked mine up at a yard sale for $1.
