here is the recipe Iv used for long time putting up my Beets. this will make 6 pints 1 cup vinegar 1 cup water 4 cups sugar 2 tsp salt 2tbsp pickling spice,use strainer when pouring brine over beets.Wash beets and cut off tops leaving about 3 in. of top of beet.Boil beets until skin peels off and cut off remaining top.slice beets to desired size and pack in jars.Combine ingredients.Bring to a Boil.Cover beets with brine.seal jars.Put jars in Large kettle and cover with water.Bring to a boil and boil for 10 min.remove and lids should seal.
