Putting Up Hen of the Woods

The good thing about this mushroom, other than the taste, is that it freezes extremely well. All I do is to cut it up and rinse with water. Dry it and vacuum pack it. No defrosting necessary. It goes from the freezer right to the pan. I got this panful from one mushroom the other night.

Thats one of the benefits on this mushroom. It's one of very few that you can freeze and it will retain its firmness even after thawing out.

I've never seen it, but I read that they can get up to 50 pounds! The other name, that people recognize, for this mushroom is maitake. They usually sell for $15.00 to $25.00 per pound! Not only do they taste great but they're very good for you and have cancer fighting properties. Hen of the woods mushroon on a venison cheeseburger! Nothing better! ;D

we harvest Hen of the woods every year.they grow right here at the plant wher I work.they are very good and yes they do get big.

mushrooms.....love them! I never thought about freezing them as I figured they would turn to mush...great tip!

I had one of these large mushrooms last year and had mushroom everything in one week so not to waste any of it!

When I was young my best friends father cooked up some mushrooms that I believe he picked from a maple tree??? I remember them to be small button mushrooms with a subtle sweet flavor...........has anyone ever heard of +/or tried this type of mushroom???

I am leery of picking any mushroom unless I know exactly what I am doing.....

my grandma used to can sheepheads all the time ...i always freeze mine like above ..
