2 x lbs. fresh walleye fillets; 1/2 tsp. salt; 1/8 tsp. pepper; 2 x tbsps. melted butter or salad oil; 2 x tbsps. lemon juice; 1 x tbsp. chopped fresh mint:
1. Season fish with salt and pepper; 2. Mix melted butter or salad oil, lemon juice, and chopped mint; 3. Brush fish with marinade and broil about 5" ins. above the heat source for 5' mins; 4. Turn over, brush again with marinade and broil 5 mins. longer or until cooked; 5. Serve garnished with extra sprigs of mint, serves 6 to 8.
Baked Stuffed Walleye:
2 1/2 x lbs. fresh walleye fillets; 1 1/2 cups 3 day old bread crumbs; 1/4 cup finely diced celery; 2 x tbsps. finely diced green peppers; 1 x tbsp. chopped onion; 1/2 x tsp. salt; 1/4 x tsp. marojam; pinch of thyme; 2 x tbsps. butter:
1. Scale and clean Walleye, leave head on; 2. Wipe with damp cloth inside and out; 3. Prepare dressing as follows: a. Saute celery, green pepper and onion in butter, until onion is translucent; b. Add seasoningsand bread crumbs, mix well. 4. Stuff fish, place in shallow greased baking dish; 5. Brush with melted butter and bake at 450* degs.F. for 15 mins. for each inch of thickness of fish, Serves 4 to 6.
