Venison Hamburger Patties....Recipe Wanted!

Every hunting season I fill our freezer with alot of venison, we use the ground meat in just about everything and of coarse the steaks too. But when summer rolls around the wife always buys ground beef for making hamburgers on the grill. Now we've added pork, beef suet even bacon to ground venison but it always seems "dry". Anyone have a recipe they don't mind sharing for making good ground venison patties?

I have the BEST recipe for venison burgers! It's so good that people actually use burgers as a barter item. Woe be the man who's having a late summer cookout and has run out of burgers if he's held in bad regard by the BURGERmeister! But the recipe is a secret that's protected by a blood oath. Give up the secret and give up some blood. Last year we made up over 2000 of these beauties.



While I can't give up the recipe, types of spices and quantities I use, I can help you out with the dryness. Mix with 12 to 15 percent beef suet and you'll have a nice juicy burger. It also helps to make them in larger sizes (1/4 to 1/3 lb) so they don't grill up too fast.

I buy 70/30 hamburger from the store when on sale. I mix this bought burger with my venison 50/50 and run them thru my grinder together. Nice juicy burgers that taste just like beef. Not the cheapest way but that is what works for my family.

I never saw a need to mix anything with my deer or moose, 'cept the usual egg, spices and bread crumbs or oatmeal. I heartily prefer my meat wild!

i was a meatcutter for 7 years don't mix beef or pork before you freeze it ground deer last much longer in the freezer than mixed with pork or beef .. i like my deer just deer but if your going to mix with pork or beef do it right before you cook it. mix fresh pork or beef taste much better JMHO

Just ran a small / fast batch, use 4# deer x 1# maple bacon. OH crap are they good!!!!!

Myself i Mix my deer with Cheap Hamburger 50/50 or 60/40! I also Freeze this in saran wrap, wrap 4 times one direction then flip and wrap 4 times in other direction!! you will find that you can not tell it was ever frozen!

I am a purist I guess. I want my deer tasting like deer. I will top with onions or a little garlic and whatever sauce is floating my boat that day but it still tastes like deer. Love it. I just had two a few weeks ago from last year and they were awesome.

I don't mix anything with my venison burger (except) if I want to eat an actual burger sandwich. Then I like it ground with bacon so it doesn't come out dry as an old yote turd.

My sausage however I want at least 30% porkfat ground with it. I can't stand lean sausage.

I like my venison ;D but when I butcher one of my steers its hard to beat good grass fed beef.

for bbq burgers i mix in 20% goat fat. Its startling how similar goat and venision taste.

GOAT FAT Well, I'll be!!! Never would of thought. Venison plain and simple for me. Maybe some onions and mushrooms if I can acquire them. Venison spaghetti , I use enough garlic in the venison to keep gnats and squitos away for the year!! I trap a farm that has goats. I will ask them for GOAT FAT!!

we butcher all of our own deer, 1st we let it hang for 10 -14 days good flavor to meat, add 10% beef fat to our burger at grinding. add a pack of onion soup mix 3 lbs of burger. out come tasty juicy burgers on the grille. medium rare for me, never never never well done! you can experiment with the soup mix to your taste. a splash of water wont hurt
