if the jelly is sealed in the jar and it is watery or like syrup you may be able to do it over maybe just dump the jars back into pot add pectin reheat and wash jars and sterilize them add new lids and re can them some fruits are low in pectin and some fruits are high in pectin and can be mixed in jellies to set up ;D like elderberry and apple elderberry is low and apple is high so the juice can be mixed and it will set up in jelly
My favourite jelly is pincherry jelly and I make it most years. I add Pectin but still had a high failure rate with the jam not setting properly. So I began to follow the long boil method. I'm not sure if its necessary to add the pectin when doing the long boil but I do it anyway...its cheap.
The only difference when completing a long boil is to boil it for about 20 minutes. I sometimes use a candy thermometer to tell me when its ready but now I just watch it - the consistency changes and the "spoon test" is completed. Put a plate and a spoon in the freezer - when you think its ready, dip it in the jam and see if it sets. You should see results on the spoon and plate in less then 10 seconds.

Thanks for the info folks! Being such a small batch maybe I will just go with the Ice Cream method. Now I can Barkspud I have a good reason be eating all the Ice Cream....
