with work and other things(including procrastinating) my cucumbers have gone a little far with some being yellow and large to some being partly yellow and still large. there are some that are just right but are the others okay for pickles or should they be used for something else...relish maybe?

Cucumbers tend to get rather bitter when they get to those stages of yellowness, and have a kind of weird taste. If you have chickens, they will probably still like them -- but there's probably not a lot of people around that would enjoy eating them in any form.
