I took some time yesterday on my day off to can up my first 6 gallons of Kraut. This batch had been fermenting since October 6th, and it successfully passed the sniff test. I also made up 40 potato dumplings since the two go together like...well...Kraut and Dumplings. I got 19 1/2 quarts of Kraut out of this first batch. I have another batch about the same size that will be ready in a week or so. Lots of meals for not a lot of money. Who else loves Kraut?
