Smoked some more chickens on the 4th

hokiller and I ran a batch of chickens and Cornish hens thru the smoker yesterday. We did 16 chickens and 10 Cornish hens. They had been injected and in a brine since Thursday evening.

I had a bucket of hickory chunks soaking in water for 2 day, then we loaded up the smoker around 10:45am.



It took about 30 minutes to get the smoker to 230, then another half hour before some good smoke was happening.



Once everything looked good and settled in, we painstakingly made it thru the first 3 hours doing this.



We opened it up then to check progress.




The Cornish hens came out shortly after 3 hours.




We left the chickens in another two hours, to reach 165-170 internal temp, then pulled them out. This batch really turned out good.

That first 3 hours of holding beer was tough i tell you,,,trying to not fall asleep in the shade with a nice breeze blowing that hickory smoke over you every now and then is tough stuff guys.
