Pretty simple recipe for the most part.
Step 1. Obtain your wild turkey. (you can substitute a yard bird if necessary)I use the breast meat only.
Step 2. In a large plastic bowl, poor in 1 bottle Worcestershire, 1 bottle of teriyaki. Add in a tbsp. Lawry's season salt, 1 tbsp regular salt, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp of black pepper, and 3 tbsps of honey.
Step 3. Mix all ingredients thoroughly, making sure the honey is completely dissolved.
Step 4. Slice turkey breast into thin strips (slightly frozen works best) and place in brine mix, add in more liquid ingredients if necessary. Turkey really soaks the brine up, so make sure you have plenty.
Step 4. Place a lid on the bowl and refrigerate for at least 24 hours, mixing every 8.
Step 5. Place strips in dehydrator, and turn on at the highest temp. After 2 hours, flip all of the jerky pieces and turn back on. 4 full trays usually takes about 6 hours to cook.
As with any recipe, you can alter it to your taste by adding other spices, or deleting some of the above.
