Ok...TOMATOES!!!! Most of you guys know how to can stewed tomatoes, but for those who don't........
First thing I do is core and remove all the bad spots. Then they get a quick rinse, before they're submerged in boiling water;
After about 45 seconds or so, the skins begin to crack. That's your cue to drain off the hot water. (Do not reach down and pull the plug with your bare hand! Ha!) The tomatoes get 'skinned' and packed into clean, hot jars;
They get covered with boiling water, and the air bubbles get worked out same as with beans. Wipe rims, place hot lids and tighten down bands. Whole and halved tomatoes get to spend 10 minutes at 11lbs of pressure in the canner. You can water bath tomatoes too. My dad doesn't even do that. He just let's them seal as they cool on the counter.
My wife uses these to make all of our sauces for pasta, etc. She even makes pizza sauce with them.

Mike, How many quarts of stewed tomatoes can you get out of a bushel? We may have to buy a bushel or two since our harvest has been so lousy. I have heard from tons of people in the area that are having the same results from their tomato plantings. Misery loves company

This is easily my worst tomato season ever. I've used tomatoes this year that I would normally toss to the chickens. And on top of that, all that rain from last week made the few good tomatoes I have split wide open.
I can't answer your question. I did up about a third of a 5 gallon bucket the other day, and I ended up with 8 pints. I used to use quarts, but with it being just the wife and I, I figured pints would make more sense.

tomatoes are doing good here. We had a dry spell early and I watered with rain barrels but not afterwards. A few of those tobacco type worms, I smashed them.
Always did the put up just like that, until I found a victorio strainer. No blanch, no coring or quartering, Juice comes out one place, seeds and skin another. I cook the juice while adding everything I can find. The freezer became my friend too, though not giving up my jars.
One my favorite recipes is a quart of sauce and wild meat in crock pot, served with mashed potatoes and veggy. Wife makes a killer lasagna too.
Jeff, I have a strainer too. I counted 65 pints of sauce in the canning cupboard leftover from last year, so I won't be doing sauce this year. It's funny too, my wife prefers whole stewed tomatoes for pasta dishes.
