Another canning question

When you guys can chicken, do you have to cook the chicken first or does it get fully cooked during the ressure canning process?

I am not an expert or anything.....but most meat is canned raw...then in the pressure cooker...so I don't think chicken would be any different.

Why don't you go get a cook book....I bet I have one to spare.... I want to call the best one the blue ball cookbook....but I know that isn't right...but it makes my laugh hysterically..oh gosh I have tears running down my face from laughing....you know the one I am talking about!! ;D

It's the BALL blue book. LOL!

JC, if I remember correctly, there is a raw pack for chicken, and also one where you brown it first. You should get a recipe book with your canner.

IN THE BALL BLUE BOOK IT SAYS
CHICKEN BONED
Steam or boil chicken until about 2/3 done remove skin and bones pack meat into hot jars leaving 1 inch head space add 1/2 tsp of salt to each pint 1 tsp of salt to each quart skim the fat from broth reheat broth to boiling pour over chicken leaving 1 inch headspace adjust caps process pints for 75 minutes or 90 minutes for quarts at 10 pounds of pressure
CHICKEN ON BONE
HOT PACK-boil steam or bake chicken until 2/3 done if uncut chickens were cooked seperate at joints as for frying packin into hot jars leaving 1 inch head space add 1/2 tps salt per pints 1 tsp of salt for quarts cover with boiling hot chicken broth leaving one inch of head space adjust caps process pints for 65 minutes and quarts for 75 minutes at 10 pounds of pressure
COLD OR RAW PACK
Separate chicken at joints pack into hot jars leaving 1 inch of headspace add 1/2 tsp salt per pint and 1 tsp for quarts do not add liquid adjust caps process pints for 65 minutes and quarts for 75 minutes at 10 pounds of pressure

I haven't canned chicken myself, but I've got a friend who does it all the time and he said that he cooks it down to bone it and then cans in the pressure cooker.

you can do araw pack, but in my opinion, it,s a waist of space in the jar,,
also anyone using an old BLUE BOOK, do your sealf a favor and get a new up to date one, things change every yr and for six bucks, it's better to be safe than sorry(sick) very sick
