This is our first year canning meat. We bought a pressure canner and the wife followed the directions for canning chicken. During the pressure canning process it appears that the jars have less broth in them now and some of the meat protrudes above the liquid. Is this normal? Everything is sealed nicely but seeing the meat above the liquid kinda makes me wonder

the only meat i've ever canned was sausage we cooked the meat packed it into jars an poured the hot greese in then we would turn the jars upside down which the greese would help seal i have some of my grandmothers really old canning books i'll dig them out an see what i can find out for ya jc
I don't know the recipe that she used, but I think it should be fine. It's not the liquid that's preserving the chicken.
As long as the jars are sealed and they were processed at the right pressure for the correct amount of time. They will be just fine.
