I've tried pignuts. They are bitter but there is at least 10 or 12 different kinds of hickories, probably more. I've got 3 or 4 different kinds in my woods. Pecans are in the hickory family, so I thought there might be some other mild tasting ones. I think they're all edible.
Hickory nuts are very good but they have to be dry. The big shag bark and skailly bark nuts are the best. Very difficult to crack but a vice works well and makes the job a bearable task. If you use a hammer be ready to have a sore thumb.
