I've been making summer sausage the last couple years with great results. Get a few guys together and make 50-100 lbs of sausage, great way to spend an afternoon.
Last year we tried making "snack sticks" using a 21 mm collagen casings and running it thru the grinder. It didn't work. I think we ended up using a jerky cannon but it still took way too much time. Any of you guys have any experience with suffers and the smaller diameter casings?
I think we all boycotted the snack sticks for this year because they were way too much work, although I'm sure that was mainly due to our technique. But we're planning on trying some brats and I'm curious if were going to run into the same problem. Any thoughts?

Cabelas has a screw drive that fits into the small diameter stuffing cone. it was listed as an optional accessory on my grinder but I haven't picked one up yet.

when we first started out we used a 15lb hand crank sausage stuffer it comes with different size stuffing tubes this would be the best for what ur doing u can get one thats 5lb for around 100$ or 30lb for around 300-500$ if ur going to do alot of stuff make sure u get one that has metal gears, these will stuff ur 21mm casings just fine and any other size u want if u have trouble finding one pm me an i'll give u some web sites where u can find them ;D
