Harvesting where I didn't sow

Wal Mart and other food stores often run discounted prices on sweet potatoes during the holidays, as low as 20 cents a pound. Nov.2007 we purchased around 70# and placed them 1 layer high in boxes. We finished up the last of them in late July. We lost a few along the way but not many. It just required a little monitoring and culling. We did like wise this Nov. but hopefully in a little better storage environment. Still 1 layer in stacked cardboard boxes but in my almost completed food storage/washroom instead of the kitchen. If the thought of eating 70# of baked sweet potatoes doesn't appeal to you try deep frying or "oven frys" and then coating them with a premixed equal parts of, smoked paprika, chipotle chile powder, ground cumin,garlic powder, onion powder, and a little salt.

Good idea, we use them in pies, mix them with meats and make a sweet burrito, we store them hanging up in a pair of old panty hose. put on in and tie a knot, then the next, tie a knot, hang up they dont touch each other, when ready to use cut off how many you need.

not to mention sweet tates are way better for you than the whites ...full of antioxidants & such!

I love sweet taters,I like to shred them in to hash browns put them in a fry pan with some onion,butter.Fry up some eggs in bacon grease along with some pork sausage.Man do I love good vittles

My great grandmother would keep, sweet potatoes, reg. potatoes and carrots in a large tub of sand in the basement.

Great tip coonmaster have a karma. Can you remember the size of the tub and exactly how she did it?

That's a really good idea ;D Our house is up on piers with insulated skirting beneath it. It's cold under there but stays above freezing. I could probably store taters & carrots in tubs of sand under there very nicely ;D I love the diversity in the info that floats around here ;D

in place of sand we use saw dust and we do it with apples too! Useing this method you can make more then one layer insureing that the do not touch.....HB Ken

This is mantellas wife, I have practically took over his account. I love this site! I make twice baked sweet potatoes out of sweet potatoes, I never liked them before, but pat told my husband about these last fall and I quickly had to figure out what to do with them. I get a free Kraft mag every season and this was in it. Thank God because they were amazing and we ended up not buying enough (especially since my dog was stealing them raw to eat)
2 large sweet potatoes (1-1/2 lb.)
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA, 1/3 Less Fat than Cream Cheese,
2 Tbsp. fat-free milk
1 Tbsp. brown sugar
1/4 tsp. ground cinnamon
1/4 cup PLANTERS Pecan Pieces
CUT potatoes lengthwise in half; place, cut-sides down, in foil-lined 15x10x1-inch pan. Bake 30 to 35 min. or until tender.
SCOOP out centers of potatoes into bowl, leaving 1/4-inch-thick shells. Add cream cheese, milk, sugar and cinnamon to potatoes; mash until blended
FILL shells with potato mixture; top with nuts. Bake 8 min. or until potatoes are heated through and nuts are toasted

You can microwave them instead of the first bake and you may also use regular cream cheese and I have made them without pecans although they are better with
