I take my left over veggies after dinner and put them in a freezer bag just keep adding to it them I use it for soup or stews but I don.t have to buy mixed veggies
Good for you. Being a little frugal is never a bad thing. I do not like the word "cheep" If gives a negative cogitation.
To me saving on food is a necessity. I would easily blow through hundreds of dollars a week on food when I was single. The way I look at it now, for what? I could have bought two or three investment properties with that money. $3000.00 a year easily at coffee shops. That covers a lot of my property taxes.
That being said, I like to eat well. I will not eat crappy food just because it is "cheep"
So good for you! I say as long as your still enjoy your soup with reheated veggies, you are frugal ;D
I think it's great. When I go moose hunting we save the leftovers and near the end of the week we make "week soup". Everything is in it. Different every year. YUM... Cheers, Chevy

At my place when dinner is done ,the left overs ether go to fridge, dog the rabbits,or the red worms in the compost pile. Everything that can get used does . All the paper ,cardboard is ether shreaded or burnt ,either way it goes in the gardens . Summer caught fish remains, and garden raidin varmits also add to the feed the garden program. If I cant find a use for the plastic bottles ,milk jugs ect.. then they go to the curb, but only after a little scutany. Needless to say trash day at my house is normally on the small side.

at the resturant i work at we take all of the left over veggie cuttings from our prep work and bag them up to go in the soups. otherwise we'd be throwing out 20 lbs of perfectly good food each week.
