Putting Up Apple Pie (The Sipping Kind)

Throughout the year I make several batches of apple pie for which a good number of folks trade various things with me for it. Well today I'm making up 4 more batches as Christmas gifts and sterilizing the mason jars as I type this.
While I'm doing this, I figured that I'd toss this simple recipe up on the forum here in case any of you kind folks would want to make your own.

Making 1 batch, I start out with...
1/2gal of apple juice
1/2gal of apple cider
1/5 Everclear (Grain Alcohol)
1/2 cup of granulated sugar
1 cinnamon stick

In a stainless steel pot I put in the cinnamon stick, apple juice, & apple cider. I bring up the heat just enough to get the cinnamon stick to move around but not to a boil. I mix in the sugar until it's fully dissolved. Once the sugar is dissolved, removed the pot from the stove and add the Everclear, stir, and put the lid on the pot.
Once it has cooled down enough to handle but still very warm, jar it up and seal it tightly with the lid. Once it's cooled completely, you can partake at your own discretion (as long as you are 21 years of age or older of course!).

My brother and sister in law from Green Bay make this all the time. They love it! I dont partake anymore,but I bet it would drink ok.

I haven't made a batch of apple pie in a while but used to like it purdy good... i started gettin into infusing blueberries and strawberry's and can't get off the stuff!! lol really not a big drinker but love making whiskey and other stuff with the clear junk that comes out the end!! Shhhh!!!

Thanks for sharing the recipe TRAPnHUNT. You have posted in the past about making and drinking your "Apple Pie" with friends and neighbors and it's something I've never heard of. Didn't want to look like a fool so I didn't ask. I'm hoping to make a batch before Christmas. Thanks Again.

Ron The everclear How strong or % alcohol is it. Not sure if I can buy the same thing here but going to look for something similar.

Any corn, or other grain, whiskey works...but I fine the corn whiskey gives it a better taste. I don't care to drink a straight corn whiskey as is, but it's great for blending with other things to make different concoctions such as apple pie, fruit infustions, amerretto, etc.. The proof of whiskey you start with isn't real important, it's what you end with after the mixture....

example: 1 gallon of 100 proof mixed with 1 gallon of apple pie ingredients will make 2 gallons of 50 proof apple pie.... 50 proof (25 abv) is a pretty light drink and won't have much kick... it's close to what I shoot for in amerretto (50-60 proof)....

In all, it depends on how strong you want the drink to be... Most can handle 50 proof without making to many faces.... Some rather it a bit stronger.... just as a tip, most whiskeys/bourbons are put on oak barrels at 110-120 proof... after 4 years of aging, the proof will drop a bit due to vapors escaping the barrels and the end product will be around 40-50 abv (80-100 proof)...

Everclear itself is 100 proof so 1/5 of everclear to the 1 gallon mixture is strong enough in my own humble opinion. It's pretty smooth & easy to drink but I recommend eating something before drinking a quart or liter and plan on sitting down for a while afterwards!

No. Something in it turns. Maybe the sugar or the cider spices? I don't know, but a fresh batch is definitely better tasting than one that's been on the shelf a bit. And it turns even faster once its been opened. We started putting them in pint jelly jars to keep em fresh longer.

We make it a few times a year as well. Same recipe as above, but add honey and a touch of nutmeg. Have also added vanilla schnapps, for pie ala mode.....

Everclear comes at 151 proof and 190 proof (%95 abv or %75 abv)... thats the only two proofs i've ever seen it in...

I don't know if you northern guys make bread puddin or not but I like to pour a bit of that apple hooch into a bowl and drop some bread puddin into the bowl. Puddin soaks it up, makes life good.

I'm starting to realize that no matter how much proof this stuff is it's going to = a good time.

I've never heard of anyone making "apple-pie" in this area. Maybe a new fad starting.

It's been pretty common down here in the south for a long time....think it just stemmed from infusing all kinds of other things with grain whiskey... try it out.. purdy good stuff

Seems like this Everclear is harder to get than a handgun? Can't even buy it in Canada. When you use this everclear, what proof do you use for the recipe?

You don't have to use everclear...any clear whiskey will do...can use a vodka, or any type of grain whiskey as long as it hasn't been oaked...so shoot for clear likker.. As far as proof, 50 is a good starting point for this type of drink...if you and yours prefers something a bit more stout, shoot for 70-80... Just do the math on how much likker proof, compared to other ingredients you have put in to figure out about what you have. Example: 1 gallon of 100 proof + 1 gallon of ingredients = 2 gallons of 50 proof finished product.....that should give you the idea....there are more accurate ways of judging proof, like a alchometer/hydrometer..but it's best you get a starting point on one proof, then add or subtract from your recipe according to taste. Have fun with it!

I know you cant buy it in the state of Ohio, or I've atleast haven't been able to find it. But you can jump to border and get it in Kentucky or you can order it online. I found this site the other day that I plan on ordering mine as I'm not drivng to kentucky

I don't know if you have to drive far to get it CJ but right now they have a sale going on at that sight. $15.19 for a 750ml bottle. Or $170.28 for a 12 bottle case.

Canadian trapper. you can buy pure 100% alcohol at the liqor store. I think you can get it right off the shelf. You might have to order it as the store manager.
