never tried buffalo but i do bluegills like that some times just scale gut and cut their heads off they take on a whole new flavor than just being filleted ;D

Yeah you can't beat them bluegills. The buffalo is still a pretty new addition to my diet. I shoot hundreds upon hundreds of them a year bow fishing, and always used them to make fish oil or fertilize the garden. Then this past winter I was watching "Swamp Pawn" on CMT, and saw they called them a delicacy. So i decided this year I'll try to eat them. as it turns out they were right. I've had them several different ways so far, but fried is by far my favorite. The trick is to trim all the red meat, then soak em salt water for three or four days changing the water every day. once they hit bout ten pounds the have a texture like chicken. They go real quick during our "Friday night get togethers", plus you end up with a tooth pick at the end.
