I wasn't a big fan of cooked greens, but after I stopped in a cafe so small you could see and talk to the cook while she was cooking, I had a plate of her greens. Since then I copied her cooking style for greens..
In a cast iron skillet, chop up bacon, onion, and sausage and brown it up well.. then add the greens, you will have to add a little water as they cook, cook them down to tender mixing and slicing the greens up as they cook.
