Here's something very simple, but delicious. First time we made these was around 3 in the morning. We were on our last night of the hunt, and cleaning out the coolers. We added a bunch of stuff to some cut up potatoes, wrapped them up, and set them in the mosquite coals.
Here is the way I make them now.
6-8 potatoes 2or3 onions fresh garlic ( you can't put too many cloves in) pound of sausage (Jimmy Dean, Bob Evans, whatever you have) salt and pepper, and any other spices you want to add
Cut up the potatoes and onions, dice the garlic cloves. You will need some heavy duty foil, or one of those foil bags. Mix everything together, breaking up the sausage into smaller chunks, wrap it up and that is about it. As I mentioned earlier, we cooked these right in the hot coals first, but you can cook them in the oven at about 375 or on the grill. If you use the oven, put a cookie sheet under them as they will drip!
